The InterContinental Montréal announces the nomination of Matthieu Saunier

The youngest executive chef within the InterContinental hotel chain 

The InterContinental Montreal is proud to announce the nomination of Matthieu Saunier as Executive Chef.  At 29, he is the youngest Executive Chef within the InterContinental hotel chain.     «We are very proud to give the opportunity to a young chef to exploit his immense talent.  Chef Saunier’s cuisine will have our guest live an authentic and luscious experience» announced Bernard Chênevert, General Manager of the InterContinental Montreal, who is renowned for his vision and his dynamic and creative team. 

Born in Martigues, a burgeoning part of Provence, Chef Saunier exercised his culinary talents from Italy to Corsica, with stints in England and Tunisia. Four years ago, he arrived in Montreal to seduce local epicurean palates.  Matthieu Saunier learned and perfected his craft with some of the best chefs, such as Chef Christian Lévêque, with whom he collaborated during his first years at the InterContinental Montreal to ensure the renewal and the originality of the culinary offer. 

Therefore, the epicurians are invited to discover Chef Saunier’s cuisine at the French brasserie Osco!.  “Designed to delight Montrealers, Osco! presents its menu on a humble slate. The affordable prices will enable everyone to discover local Quebec products enhanced with the flavours of Provence. Extra virgin olive oil, lavender, honey, fine herbs and rosé wine from Provence will enchant the diners. The only thing missing will be the sound of cicadas!” exclaims the new Chef, Matthieu Saunier, with an irresistible southern accent. True to his Occitan roots, he offers a menu full of sunshine, including a succulent lobster bouillabaisse, creamy risotto dishes and a unique white chocolate mousse with absinthe. And of course, fine cuisine is incomplete without fine wine! The Osco! wine cellar will please experienced connaisseurs and simple wine lovers alike. This eclectic cellar consists of around 700 hand-picked bottles, including a large assortment of enticing private imports and wines made in organic and biodynamic wineries.
